The "7" in Cazcanes No. 7 refers to the seven-pointed star of the Pleiades constellation, known as "Cazcanes" to the indigenous people of Jalisco — and the Añejo is where Master Distiller Francisco "Don Chico" Jiménez's 39 years of experience shows most. It's a blend of barrels aged from one to over two years, blended "to taste, not to time," with the final flavor profile guiding the process rather than a calendar — Curiada even notes the blender's centuries-old technique of evaluating tequila from a cow horn. Made at NOM 1614 in Amatitán from 100% organic Blue Weber agave cooked in low-pressure autoclaves over 24 hours, milled in four roller passes, double distilled in stainless pots with copper coils, and proofed with volcanic spring water trucked in from Navichi Springs. The used American oak barrels are reworked and re-charred before filling. Certified organic, kosher, and verified additive-free. Expect crisp apple, almond cream, maple, toffee, cherry, cigar box, nutmeg, and chocolate on the nose, with warm spices, vanilla, and coconut on the palate, finishing long and lush with soft oak, dark chocolate, and deep agave.
