History
Champagne Collet Brut Art Deco is crafted with three main grape varieties: Chardonnay, Pinot Noir and Pinot Meunier. Champagne Collet’s vineyard sources are in Premier and Grand Cru villages that reflect the diversity of Champagne’s terroirs. The fruit comes from a vast majority of growers. However, winemaker Sebastien Walasiak uses no more than 10% of the overall vineyard yields. The grapes are gently pressed at stations in each vineyard within one hour of being hand harvested so that the clarity of the must is not compromised. Next, an indigenous, natural primary fermentation takes place at the winery. Sebastien blends the base wines of the classic Champagne varieties from hundreds of vineyards and vintages to maintain Champagne Collet’s incomparable house style. The cuvees are bottled with a bit of sugar and yeast for the second fermentation, or ‘prise de mousse.’ After disgorgement, the bottles are aged in 100-year-old chalk cellars resulting in softer wines needing less dosage. Some cuvees are matured in barrels from oaks grown in the appellation. This meticulous attention to detail ensures that each bottle encapsulates the elegance and complexity that Champagne Collet is renowned for, making it a true reflection of its heritage and the terroir from which it originates.
