About the coffee:

From the highlands of Urrao, Antioquia, this coffee represents the heart of Colombia’s emerging Chiroso movement. Grown by Yenser Urán on his family’s farm El Pencil, this microlot captures the variety’s distinct floral and fruit-forward elegance through a careful natural anaerobic process.

Expect a layered cup that’s bright, syrupy, and deeply aromatic — bursting with the kind of complexity that has made Chiroso one of Colombia’s most sought-after varieties.

Full-bodied and fruit-driven with a velvety sweetness, this coffee opens with lush berry notes and finishes with a clean, syrupy texture that lingers.

The Process

Ripe cherries are handpicked and sealed in oxygen-free bags for a three-day anaerobic fermentation, intensifying sweetness and complexity. Afterward, they are sun-dried for 5–10 days in canopies, then rested for 21 days to stabilize and develop balance. The result: a naturally processed Chiroso with structure, clarity, and exceptional longevity in the cup.

The Producer

For more than 25 years, Yenser Urán has cultivated coffee alongside his brothers in Urrao, continuing a family tradition that spans generations. His farm, El Pencil, has been in the family for over 50 years, where they now grow exclusively Chiroso — a rare variety first discovered in this region and now redefining Colombian coffee through its vibrant fruit character and depth.
