• Destilado de Agave produced in Zapotitlán, Jalisco, Mexico • Maestros Mezcaleros Macurio & Miguel Partida • Made from 100% Ixtero Amarillo (Agave rhodacantha) • Agave is cooked in an earthen pit oven using a mixture of mesquite and guamúchil wood • Milled using axe, mallet, and a small mechanical grinder • Fermented with natural yeasts in deep stone wells and wooden vats (tinas) • Distilled in hybrid Filipino-style stills made of a copper pot, hollow parota tree trunk, and rolled agave leaf (penca) • 48.7% ABV (ABV may vary batch to batch) The Partida family grows their Ixtero Amarillo to a reasonably consistent maturity of around 12 years; the agave is then cut in the capón style and allowed to continue saturating sugars in the field for a mind-boggling 4 years further. The resulting mezcal is drier, with more layers of herbs and spice, than much of the family’s output from Agave angustifolia. Miguel claims this variety is his favorite to drink.
