Dingle Distillery Vodka is a premium hand-made vodka produced in Dingle, Ireland, taking its name from the picturesque town in which it is located. Established in 2012, the distillery resides in a converted old sawmill, marking it as Ireland’s first artisan distillery where visitors are drawn to experience the charm of Europe’s westernmost human settlement. The distillery combines traditional independent distilling methods with innovative techniques, allowing for the creation of small batches. With the humid climate and cool gulf stream breezes, Dingle provides an ideal environment for spirit distillation. Restaurateur Oliver Hughes, inspired to create Ireland’s first artisan distillery, equipped it with traditional pot stills crafted by Master Distiller John McDougall, affectionately named Oisin. This distillery produces Ireland’s first small batch vodka, gin, and whiskey, utilizing locally sourced botanicals that capture the essence of Ireland’s west coast. The meticulous process involves macerating the botanicals for 24 hours, distilling in a custom pot still, and enhancing the flavor profile in a unique flavor basket. The spirit undergoes charcoal filtering and is blended with pure water from a well 240 feet below the distillery before being hand bottled, ensuring each batch reflects the rich heritage and landscape of the region.
