Still on its own roots, this Roussanne was planted by Sarah in 1995 on the granitic soils of Tabilk. The vineyard is lovingly tended with organic fertilisers, compost, and a deep commitment to sustainability—soil health and long-term vitality front and centre.
Handpicked fruit, whole bunches, and a wild ride: carbonic maceration, 10 days on skins, then three months on full ferment lees.
What’s in the glass?
Fruity, floral and zingy, with mouth-puckering acidity and a slippery, textural edge. Think orange blossom, white peach, a twist of tangerine, and a herbal lift. Juicy, grippy, and seriously moreish.
One sip won’t be enough.
Pair it with:
Miso-roasted eggplant, charred corn with smoked paprika butter, potato and rosemary pizza, or a crispy tofu bánh mì. This one loves bold flavours and salty crunch.
