Fosforo's newest expression is a spectacular blend of Tobalá and Espadilla. On the nose, you'll encounter inviting notes of bright citrus, white flowers, and early springtime aromatics. A cultivar cousin of the ever-popular Espadin plant, Espadilla is native to Puebla and provides a more complex and fruit-forward backbone for the Ensamble.
The palate offers a rich yet approachable combination of papaya, white pepper, and pear skin which leads to the signature, lingering full-mouth feel that characterizes Fosforo's Tobalá house style.
Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled.
