Straight Bourbon Whiskey | 50% ABV (100 Proof) | Aged 4 Years 5 Months | Bottled-in-Bond | Released Summer 2025
High West has launched its second Bottled-in-Bond release—a 100% in-house bourbon from its Wanship, Utah facility. Adhering to the 1897 Bottled-in-Bond Act, this bourbon is distilled in a single season by one distiller, aged at least four years, and bottled at 100 proof in a federally bonded warehouse. Crafted from a mash bill of 64% non-GMO Colorado yellow corn and 36% Idaho rye grown with sustainable, carbon-conscious practices, it’s fermented using three distinct yeast strains, including the rare S. diastaticus, to enhance aroma complexity. Aged at an altitude of ~4,000 feet, the result is a high-rye expression rich in aromatic depth.
Nose: Honeycrisp apple, wildflower honey, graham cracker crust, and malted milk chocolate with toasted oak spice.
Palate: Layers of peach and cherry cobbler, gingersnaps, roasted marshmallows, puffed wheat cereal, cocoa nibs, molasses, dried thyme, and charred barrel staves.
Finish: Long with nuanced almond browning and brown butter warmth.
High West’s first nationally released bourbon fully distilled in-house, marking a bold shift toward self-produced expressions.
Complies strictly with the Bottled-in-Bond Act, reinforcing authenticity and provenance.
Showcases intentional ingredient and fermentation diversity (corn, rye, yeast) for layered complexity.
A limited yet widely accessible release—with online sales beginning August 1, 2025, and MSRP around $80.
Best sipped neat in a tulip or Glencairn glass to experience its full aromatic range and baking spice character. Great for cocktails, especially like a rich Old Fashioned or Boulevardier where its apple-spice profile shines.
