High West Bourbon is a blend of straight bourbon whiskeys aged from 3 to 13 years.
The High West Distillery was founded in 2006 by David Perkins and his wife, Jane.
David, a former biochemist, was inspired to open his own distillery after a trip to the Maker’s Mark Distillery in Loretto, Kentucky.
There, he saw the parallels between the fermentation and distilling processes and his own work in biochemistry.
In 2004, David and his family relocated to Park City, Utah, to begin their new venture, which they launched in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history.
Nose: Light caramel and sweet vanilla
Palate: Rich and earthy on the palate with well-balanced flavours of candy corn, honey nougat, and sweet corn bread biscuits
Finish: Vanilla with a hint of caramel apple
