Hillrock Estate Distillery is one of the few American whiskey producers using estate-grown grain, an on-site malt house, and traditional Solera aging. The Sauternes finish brings the influence of French noble-rot Bordeaux dessert wine into the bourbon — a finishing program more familiar in Scotch single malt than American whiskey.
