Indopusaka

Indopusaka, a natural-processed lot, boasts a rich grape and red wine character. It’s grown by PKNI, a specialty coffee operation based in Cianjur, West Java.

PKNI, led by Rivo Trie Septiadiguna, prioritizes community impact in its operations. They provide hands-on support to farmers through collaboration and knowledge-sharing across their network. Additionally, they foster long-term partnerships built on trust and shared commitment to quality.

For this lot, freshly harvested coffee cherries are meticulously selected and spread in thin layers on patios or raised drying beds to dry under the sun. Throughout the drying process, the cherries are regularly turned to ensure even moisture reduction.

Once the cherries reach a raisin-like dryness, they’re milled to reveal the green bean beneath. This process allows the bean to absorb sugars and compounds from the fruit, creating a vibrant flavor profile.

The resulting coffee presents a harmonious blend of sweetness reminiscent of Grape Soda, acidity reminiscent of Cabernet, and an anchoring dried fruit flavor reminiscent of Fig.
