La Gauloise Classic Yellow Liqueur is a softer, rounder expression of the historic French herbal liqueur. Saffron, citrus, warm spice, and gray pepper lead into a creamy palate layered with honey, flowers, licorice, and gentle sweetness. Bottled at 40% ABV, it balances rich texture with enough herbal intensity to remain distinctive in spirit-forward cocktails.
Producer
La Gauloise is produced by Distillerie du Centre in Limoges, France, using a recipe said to have been rediscovered in an old grimoire in 1783. Angelica, St. John’s wort, saffron, cardamom, genepi, and other botanicals are double-distilled over a wood fire before being combined with fine eau-de-vie and sugar syrup. The yellow expression received a gold medal at France’s Concours Général Agricole in 2018.
