La Luna Mezcal Manso Sahuayo is a single-varietal Michoacán mezcal made with the unclassified Maguey Manso Sahuayo (Agave Sp), known locally as Manso, Chato, or Cenizo. The agave were cultivated and harvested from the area of Jiquilpan and Sahuayo in Michoacán. Cooked 121 hours, rested 144 hours, fermented 12 days, and distilled in a copper “cazo” and pinewood still.
The Perez Escot family has been traditionally crafting mezcal on the same Villa Madero property since 1910, currently on the 4th generation of mezcaleros. Manso Sahuayo is one of the lesser-known regional Michoacán agaves — the long fermentation cycle (12 days) and the traditional Michoacán copper-pinewood still produce a distinctly regional mezcal expression outside the Oaxacan tradition.
