Michele Chiarlo Grappa di Moscato Palás is a fragrant single-varietal Moscato grappa from Piedmont winemaker Michele Chiarlo — distilled in small copper bain-marie batch stills from fresh Moscato pomace within days of fermentation, then refined in stainless steel for 3-6 months to preserve the cool, aromatic character of the Moscato grape.
Michele Chiarlo grappas have, for more than 40 years, been synonymous with elegance and clean taste. Production uses small copper bain-marie and discontinuous-steam stills, which yield a gentle grappa that retains the character of the varietal of origin. Freshness matters: pomace must not be pressed but rather lees-rich, so distillation takes place within days of the end of fermentation. Each copper pot is distilled for two hours; once distillation is complete the alcohol percentage is reduced with distilled water, then chilled and filtered to remove oils released from the grape pips. The final product is refined in stainless steel for 3-6 months before bottling.
Since 1956, the Piedmont winemaker Michele Chiarlo has been at the forefront of Italy’s quality-driven producers, building a reputation first on Barbera and Barolo before extending the same purity-of-grape philosophy to grappa.
