What is Amontillado sherry and how does it differ from Oloroso?
Amontillado begins as a Fino but has its flor yeast die out, then oxidises to develop nutty, amber, and complex characteristics. It is drier and lighter than Oloroso, with almond, dried fruit, and woodsy notes rather than the heavier, darker Oloroso character. Amontillado casks therefore add a lighter, more complex dimension than Oloroso.
