Rabbit Hole Distilling, founded by Kaveh Zamanian, makes its Kentucky straight bourbon whiskey from four grains: 70% corn, 10% malted wheat, 10% honey malted barley, and 10% malted barley. It is aged in toasted and charred new American oak barrels (char #3).
Nose: A very light nose. Spice, honey and green apples.
Palate: Creamy flavours of orange, honey, mint and hints of toasted grain.
Finish: Burnt toffee, bread pudding with raisins and a tiny amount of bananas foster. There is some alcohol astringency but it’s not much. The faintest amount of bitter oak reveals itself towards the end.
