Made entirely from baking-grade molasses and fermented for over two weeks using Saccharomyces cerevisiae yeast, this small-batch rum is pure and unadulterated—just molasses, yeast, and water, double pot distilled to a 75% spirit before being bottled at 49% ABV. Only 10.5 gallons were made, each drop brimming with raw character.
On the nose, it opens with rich buckwheat honey wrapped around dried mango and pineapple, followed by cinnamon raisin toast, orange zest, and a touch of coconut. The palate is creamy and layered with dried figs, roasted cinnamon bark, and toasted cashews balanced by bitter caramel and fresh grapefruit.
