The difference between the two bottlings is in the barrel selection. Whereas fruit-forward barrels are earmarked for the 91 Proof (and subsequently dumped into a solera finishing barrel), oak-influenced barrels are earmarked for the 111 Proof and bottled directly. Sourced from a single fermentation, this cask-strength expression amplifies the caramel and malt notes of the whiskey and introduces distinctive elements of dark chocolate, dried cherries, and baking spices. A greater emphasis on toasted oak—plus the intensity of the higher proof—result in a top-shelf, cask-forward sipper that belies its modest price tag.
