Straight Bourbon Whiskey, 91 Proof, Chattanooga Whiskey

• Straight bourbon whiskey produced by Chattanooga Whiskey in Chattanooga, Tennessee • Mash bill of 75% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee, 12% pale malted rye from Canada, 7% US-grown caramel malted barley, and 6% US-grown honey malted barley • Temperature-controlled, open-top fermented for 7 days with a yeast strain typically used for single malt • Distilled in a 30-foot high, 18-plate Vendome column still and custom Vendome copper doubler • Aged in 50% char #3 and 50% char #4 53-gallon oak barrels with a custom toast from Independent Stave Company • Finished in a 4000-gallon charred oak solera barrel from Foeder Crafters of America; 15% of the barrel is emptied for each batch • On the nose, a sumptuous mélange of ripe and lightly poached orchard fruit is blended with enough buttery pastry to evoke a stone-fruit crumble evolving into a strawberry marshmallow spiced with hints of barrel. On the palate, the fruit notes take on a reassuring, warming weight, and the oak spice is amplified. • Produced in small batches of 8–12 barrels • Aged a minimum of 2 years; non-age statement • Non-chill filtered; 45.5% ABV Between 2015 and 2017, Chattanooga Whiskey produced 100 different experimental barrels to isolate the whiskey that best exemplified the high-malt style they aspired to produce. They found what they were looking for when they tasted the 91st barrel, and this bourbon was selected to be scaled up in their newly constructed riverfront production facility. This flagship whiskey is round and full of flavor, bottled at a proof that invites cocktailing, and an excellent introduction to the distillery’s house style.
