Brewed at Thomson Place, Witbier marks another look back into the brewing traditions of the Old World. This style has a unique sense of time and place. Initially, Witbiers rose to prominence in the 18th Century as they utilized the rich, fertile crops of wheat, oat and barley found in the farmlands of Eastern Belgium and new exotic spices entering Brussels from the New World. All but extinct for a time, craft brewers have breathed new life into this classic style.
For our iteration, we revisited our recipe from Permutation 35 - a malt bill made up primarily of wheat with coriander and orange peel as spice additions. The nose interweaves aromas of fresh dough with perfumed, dried citrus peel and faint spice. Witbier’s creamy mouthfeel calls to mind spongy wheat bread as flavors of orange blossom and savory coriander dance across the palate. Silky smooth with a light finish, Witbier has a clean and nuanced herbal bitterness that makes for a refreshing pint.
