Pechuga is traditionally reserved for Oaxaca's most special occasions, and Yola's version — launched in late 2023, made by the same master mezcalera Guadalupe Bautista behind their base Espadín and Madrecuixe blend — follows the classic method: a raw turkey breast is suspended above the mezcal during its third and final distillation, hanging over a bath of seasonal fruit (orange, tangerine, lime, guayaba, pineapple, and tejocote) that infuses the spirit with layers of citrus and roasted fruit character. Don't let the process put you off — reviewers consistently note it doesn't taste like turkey at all, nor does it carry any oily off-notes. Because the exact fruit blend shifts seasonally, no two batches are quite identical. It picked up a Gold Medal at the 2024 San Francisco World Spirits Competition.
